Bahamian Kabobs!

Here is a VERY yummy recipe that Nick and I tried a couple of weeks ago and are going to have it again one night this week. This recipe is actually from the restaurant Bahama Breeze we haven't actually ate this at the restaurant so we don't really have anything to compare it to but we still thought it was delicious! For those of you with large families, this recipe only serves two. Marinating: 8 Steak Chunks, 1 oz wt pieces (or chicken) Your Favorite Teriyaki Marinade ½ Cup PREPARATION: Marinate 4 hours in the refrigerator Kabobs: 8 Marinated Steak Chunks (Or Chicken) 1" pieces of your favorite vegetables as needed (we used Mushrooms and Bell Peppers) Bamboo or Metal Skewers 12" * If bamboo skewers are used, soak in water for one hour prior to use to avoid burning during the grilling process PREPARATION: Skewer the marinated steak and vegetables until the skewers are full. Be sure to leave a little space between the items on the skewer to ensure even cooking. Set Aside Kabob Basting Sauce: ¼ cup Orange Juice Fresh Squeezed (We used pre-made orange juice) ½ cup Pickapeppa Sauce or BBQ Sauce 1 Tbsp Brown Sugar 2 tsp Chopped Cilantro (Optional) PREPARATION: Mix the ingredients in a small bowl until evenly combined and set aside for grilling. Grilling: Place the kabobs on a well oiled, preheated grill. During the grilling process turn the kabobs over every 2 minutes and baste the cooked sides lightly with basting sauce to develop a glaze. Grill to your desired doneness and lightly season with salt and pepper before removing from the grill. Serve with your favorite side dish and Enjoy!!!
